Make Homemade Noodles

Making your own noodles for your pasta dishes puts a personal touch on the entire meal. You can add them to spaghetti, soups and other recipes. All you need are a few ingredients and a little time.


Instructions


1. Separate the whites from the yolks of three eggs, placing the yolk in a small bowl and discarding the white.


2. Crack open another egg, and put both white and yolk in the bowl with the rest of the yolks. Beat with the egg beater until well blended.


3. Stir in 3 tablespoons of cold water and 1 teaspoon of salt. Beat until well blended.


4. Stir in 2 cups of flour. Continue to stir until all of the flour has been absorbed by the water. Knead the mixture with your hands until the dough becomes smooth.


5. Dust the rolling pin with flour. Roll out the dough with the rolling pin until the dough is very thin. Then, roll up the dough as you would a jelly roll. Slice the roll of dough to the width of noodles you prefer.


6. Allow the noodles to dry for at least 15 minutes so that they don't stick to one another.


7. Boil the noodles to enjoy right away, or pack them in a zip-close freezer bag for a later time. If you're freezing the noodles, squeeze as much excess air from the bag as you can and be sure to seal it tightly.
