Cook With Liquid Stevia

Useful in a diabetic diet, stevia concentrated into liquid drops sweetens your food without using sugar or artificial sweeteners. Use liquid stevia for cooking and baking, but since the amount required differs from the amount of sugar in the recipe, you will need to make other adjustments for success in your finished food. Replace all or part of the sugar in most of your favorite recipes for a healthier option to cooking with artificial sweeteners.


Instructions


1. Examine a recipe for the total amount of sugar originally required. Consult an equivalency chart for the amount of liquid stevia to use instead. Follow the general guideline of 1 tsp. of clear liquid stevia per cup of sugar.


2. Increase the amount of liquid or oil in the recipe by 1/3 cup for each cup of sugar replaced with liquid stevia. Choose to add extra juice, fruit puree, eggs, milk, yogurt or water. For instance, replace 2 cups of sugar with 2 tsps. liquid stevia and add 2/3 cup of applesauce or yogurt to the recipe.


3. Use at least 1 tbsp. sugar in recipes relying on yeast to rise.


4. Opt for recipes cooked at temperatures below the heat tolerance level of liquid stevia of 388 F to 400 degrees Fahrenheit.


5. Stir the liquid stevia into the eggs or other liquid ingredients for the recipe when adding to your cooking.


6. Do not rely on browning to determine when the food gets done. Insert a skewer or fork into the center of the food and remove from the heat when it emerges without crumbs.


7. If possible, maintain the sweetness of stevia by adding it to sauces, dressings or liquids after cooking or use in cold applications.
