Properly Roast Whole Baby Potatoes

Roast baby potatoes with garlic and herbs for an interesting side dish.


There are dozens of baby potato varieties available at most grocery stores -- and each variety has a unique flavor and texture. Try serving cold whole-roasted potatoes as an appetizer with a variety of dipping sauces or dressings at your next party. Baby potatoes can also be roasted whole and served alongside your favorite main course as a side dish, or work as the basis for a potato salad recipe. These versatile spuds can be seasoned in a variety of ways to suit your culinary needs.


Instructions


1. Wash and dry one pound of baby new potatoes


2. Preheat your oven to 400 degrees Fahrenheit.


3. Put the potatoes in a large bowl.


4. Mince three cloves of garlic and add to a small bowl with two tablespoons of dry herb blend and 1/4 cup olive oil. Whisk all of it together and pour over the potatoes.


5. Season the potatoes liberally with salt and pepper. Toss the bowl to coat the potatoes evenly. Transfer to a roasting pan and space the potatoes evenly apart.


6. Roast the potatoes in your preheated oven for one hour, turning frequently until tender and golden brown. Serve hot.
