Make A Sugar Paste Alphabet

Satiny smooth and sweet sugar paste letters add an edible touch to cakes and other baked goods. Create an entire alphabet or just your name, and save the extra letters for later use. Sugar paste, also called gum paste, is available ready-made at craft and cake decorating supply stores. Working with the sugar paste will bring you back to your childhood days of playing with modeling clay, as the texture and working techniques are similar. If you have leftover sugar paste, keep it on hand for making more letters or molding into other designs.


Instructions


1. Knead the sugar paste until it becomes warm and pliable. If you desire, add a few drops of food coloring to the sugar paste before kneading, and knead the paste until pliable. The color will be incorporated into the entire batch of sugar paste as you knead.


2. Roll the sugar paste on a lightly cornstarch-dusted surface until it measures 1/16 inch thick.


3. Press alphabet shaped cookie cutters into the sugar paste.


4. Gently pull the letter shapes from the remaining flattened sugar paste.


5. Dry the alphabet cutouts on a sheet of wax paper overnight or until hardened.


6. Attach the sugar paste alphabet letters to a cake by brushing beaten egg white on the back of the letter.


7. Store leftover sugar paste in an airtight container in the pantry.
