Make Chocolate Doughnut Holes


Chocolate doughnut holes are easy to make at home with refrigerated biscuit dough, chocolate and confectioners' sugar. They can be further embellished by adding a number of optional ingredients, if desired. This recipe yields approximately 24 chocolate doughnut holes, but it can be doubled or tripled.


Instructions


1. Fill a large saucepan about one-third full with peanut oil. Turn the heat to medium and warm the oil until it reaches 350 degrees F. Use a candy thermometer to check the temperature.


2. Open a can of refrigerated biscuits and separate the dough. Cut each individual biscuit into four equally sized pieces and roll them into balls. These are your doughnut holes.


3. Place the doughnut holes into the hot oil and fry for 3 to 5 minutes, flipping about halfway through cooking to brown both sides. Remove the holes from the oil and place them on paper towels to drain.


4. Add one 4-oz. bar of sweet chocolate, half a square (1/2 oz.) of unsweetened chocolate and one stick of unsalted butter to a small saucepan. Turn the heat to low and allow the mixture to melt completely, stirring occasionally.


5. Slowly add 3 cups of confectioners' sugar and 1½ cups of evaporated milk to the melted chocolate, alternating a bit of each, until the ingredients are combined. Turn the heat up to medium and bring the chocolate mixture to a boil, stirring occasionally.


6. Turn the heat to low again, and stir until the chocolate becomes creamy and thick, about 5 to 10 minutes. Add 1½ tsp. of vanilla extract, and stir well to combine. Remove the mixture from the heat.


7. Use a fork to pick up the doughnut holes, one at a time, and dip them in the melted chocolate before it begins to cool. Place the finished chocolate doughnut holes onto a plate until the chocolate sets, about 5 minutes. Serve immediately or refrigerate.
