Make Pepperoni Pasta Salad

You can substitute spiral pasta for farfalle pasta.


Some pasta salads come and go. Some stick in your memory as a delicious side dish while others are easily forgotten. A pepperoni pasta salad can be one to remember. It works well as a summer, Italian meal or on its own, as it has vegetables, starches and proteins. Pepperoni pasta salads also works for large gatherings. This recipe serves 12.


Instructions


1. Place four quarts water and 1/2 tsp. salt into the large pot.


2. Place the pot on the stove and boil the water over high heat.


3. Add the farfalle pasta to the boiling water. Boil the pasta according to package directions.


4. Place the colander in your sink. Pour the pasta and water into the colander.


5. Let the pasta drain. Rinse it with cool water.


6. Transfer the pasta to the large mixing bowl.


7. Add the kidney beans, pepperoni, tomato, parsley, black pepper, Italian dressing and Parmesan cheese to the pasta in the bowl.


8. Stir or toss the pasta with the mixing spoon until all pieces are coated in the Italian dressing.


9. Cover the bowl with plastic wrap and refrigerate for at least one hour.
