Creamy Rice Pudding Recipe
Rice pudding is the best thing you could possibly make with left over rice. Creamy and full of wholesome ingredients, you will never again groan at the prospect of leftover rice. Make creamy rice pudding for your family today.
Instructions
1. GET THE RICE RIGHT: For ultra-creamy rice pudding, use high starch, or sticky type oriental rice. Jasmine Rice is especially creamy, Basmati rice also works well. Regular American Long Grain rice is a less desirable option, but will do in a pinch.
2. Preheat oven to 350 degrees
3. Measure the rice into the casserole dish.
4. In a mixing bowl, add the milk, eggs, sugar and salt. Beat until well mixed. Pour over rice in the casserole dish.
5. Add dried fruit and stir to mix well. This is an optional step. I am partial to the use of the cranberries or cherries and am not a big fan of raisins in this dish.
6. Sprinkle the top with ground nutmeg. Place casserole dish into the 9x13 inch baking pan. Fill the baking pan with water until 1 inch deep. Place in the center of oven and bake about 1 hour and 15 minutes, or until a knife inserted in the middle of the custard, comes up clean. Remove from oven and cool.
7. Great served warm with whipped cream.
