Stir-fried frog's legs are a common item seen on the menu of many fancy banquets and holiday gatherings all over China. Borrowing a bit from French cooking, chefs have been preparing stir-fried frogs legs with typical Chinese spices and ingredients like ginger, sesame oil and sherry to create a dish that is both rich in flavor and presentation. Instructions
1. Wash the frog's legs thoroughly under warm water and pat dry with a disposable kitchen towel. Rub the frog's legs with the salt, sugar, MSG and black pepper and set aside. Combine the sherry, sesame oil and chicken stock in a small mixing bowl. Set aside.
2. Heat the vegetable oil in a large wok until extremely hot. Fry half of the frog's legs for two to three minutes, turning regularly. Reheat the oil and fry the other half of the frog's legs. Remove from the wok and set aside.
3. Heat the lard in a clean wok and fry the ginger, garlic and carrots for one to two minutes. Add the frog's legs and seasoning mixture from the small mixing bowl. Cook for an additional one to two minutes over medium heat.
4. Add the flour slowly and stir the sauce until it thickens. Add the spring onions and cook for three to five minutes, or until the onions brown in spots. Stir thoroughly and transfer to a large serving platter or individual plates. Serve immediately.
