How Cook Rice & Beans In A Crock Pot Together

The slow cooker removes excess preparation time, simplifying beans and rice.


For busy moms and others with little time for cooking, slow cookers make it possible for healthy, home-cooked dinners. Beans and rice are high in fiber and protein, but with standard cooking methods it can be time consuming to prepare, which makes them ideal candidates for the slow cooker. The combination of the slow cooker and canned beans makes for easy preparation, and removes the stress of cooking from your to-do list.


Instructions


1. Chop the 1 cup onion, 3/4 cup sweet red pepper, 3/4 cup green pepper, and the sausage. Mince the 6 tbsp. garlic. Seed and chop the jalapeno pepper, if using. Add ingredients to the pot.


2. Strain the three cans of beans. Add the beans to the pot with 2 cups of uncooked rice.


3. Season the bean mixture with 2 tbsp. Cajun seasoning, salt and bay leaf. Add the hot sauce, if using. Pour in 4 cups of water. Stir the mixture.


4. Place the cover on the slow cooker and set the temperature on high. Allow the ingredients to heat through, then stir. Return the cover to the slow cooker. Cook for six hours on low heat and four hours on high speed.
