Make Chinese Garlic Chicken

Chinese garlic chicken is a hearty and nourishing dish. Full of healthy vegetables and a rich, garlic sauce, Chinese garlic chicken is easy enough for every day, but delicious enough for guests. Serve it with some rice or noodles on the side, and dinner is served.


Instructions


1. Chop the chicken breasts into 2-inch pieces.


2. Create the marinade by combining the dry sherry, salt and sesame oil in a large bowl. Add the chicken and stir so that all of the pieces are coated. Let the chicken marinate for a minimum of 20 minutes.


3. Heat a cup of oil in a large skillet or wok and stir fry the chicken until it's nearly cooked, about 3 to 4 minutes. Remove the chicken, draining the oil back into the pan, and set the chicken aside. Leave four tbsp. of oil in the wok or skillet, and drain what remains. Set it aside.


4. Stir the cornstarch into the chicken stock until it dissolves and the mixture is very thick and pasty. Set it aside.


5. Re-heat the oil in the skillet or wok and add the garlic, cooked chicken, bamboo shoots and water chestnuts or carrots. Stir fry the mixture for about 2 minutes, then add the sugar, salt, water and soy sauce.


6. Cover and simmer the mixture on low heat for ten minutes. Add the cornstarch mixture and continue to stir fry until the sauce begins to thicken, approximately 30 seconds.


7. Stir 1 tsp. of sesame oil into the Chinese garlic chicken and serve it hot.
