Make Mozzarella Tomato And Grilled Chicken Caprese Sandwich

Make the classic caprese a sandwich with a twist.


Caprese salad is a classic Italian favorite. Made of basil, fresh mozzarella, fresh tomatoes, a drizzle of olive oil and balsamic vinegar, it also makes a delicious sandwich. Adding chicken breasts makes the sandwich very hearty -- an easy meal for two. Serve the sandwich on focaccia bread rubbed with garlic or rosemary for a delicious lunch. While you can use pre-packaged mozzarella, fresh mozzarella makes the sandwich even more flavorful and imparts a rich, velvety texture.


Instructions


1. Marinate two chicken breasts in balsamic vinegar overnight in a sealed plastic bag.


2. Grill the chicken on a classic outdoor grill or on a panini grill indoors adding salt and pepper to taste. The chicken is fully cooked at an internal temperature of 160 degrees F as read by a meat thermometer.


3. Slice the chicken, mozzarella cheese and tomatoes into thin strips using a sharp knife. Finely chop a handful of fresh basil. Slice the focaccia bread in half horizontally.


4. Arrange alternating slices of mozzarella and tomatoes on the bottom slice of the focaccia bread. Put fresh basil, slices of chicken and a drizzle of balsamic vinegar and olive oil on top of chicken, mozzarella and tomatoes.


5. Top the sandwich with the remaining slice of focaccia and cut the sandwich in half.
