Shrimp Cocktail Salad

Shrimp are a good source of protein


Incorporating shrimp cocktail to a salad makes a great appetizer or side dish for summer dinner parties. Shrimp cocktail salad is healthy and nutritious, providing a good source of protein, fiber, vitamins and minerals while remaining low in calories and fats. Supplement your own cocktail sauce with that of the following recipe, or use your favorite brand to reduce preparation time.


Instructions


1. Prepare the shrimp. If using uncooked prawns, remove the shell, run the knife along the mid-line of the shrimp to remove the vein and cook by broiling or pan-frying. Alternatively, use ready to eat shrimp.


2. Add the mayonnaise and chili sauce to a small bowl and mix thoroughly. Add the horseradish to taste, about 1/2 cup. Stir together and season with pepper and lemon juice if required.


3. Roughly chop the lettuce and cut the cabbage into thin slices. Wash and mix together before placing on a large-rimmed serving plate.


4. Dollop the dressing over the prepared lettuce and cabbage. Spread to cover evenly.


5. Wash and thinly slice the celery and onion. Scatter the celery, onion and shrimp evenly over the lettuce and cabbage.


6. Chop each lemon into eight wedges and place on the plate-rim to garnish.


7. Place the prepared salad into a refrigerator and chill before serving. If chilling for more than 15 minutes, wrap the salad in cellophane to keep it fresh.
