Imitation crab meat can be used in place of real crab in many recipes.
Also known as surimi, imitation crab meat is a mixture of fish that have been shaped, colored and flavored so it looks like real crab meat. A majority of the time, imitation crab meat is made from Alaskan pollock; however, depending upon the brand, other types of fish may be added to the mixture.
