Make Sesame Seed Snack Crackers

Sesame seeds are one of the oldest cultivated plants in the world, with a history as far back as 4,000 years. Today, India is the largest sesame seed producing nation and the United States imports about 2,200 tons annually. Sesame oil and seeds are used in sesame seed snack crackers. Great for munching out-of-hand or with cheese or fruit, they are more healthful than those you buy, because they are made without preservatives and you control the ingredients.


Instructions


1. Preheat oven to 350 degrees Fahrenheit.


2. Combine 1 1/2 cups oats, 1 cup all-purpose flour, 1/2 cup wheat germ, 2 tbs. sugar, 1 tsp. salt and 1/2 tsp. ground red pepper in a large bowl.


3. Cut butter into dry mix with pastry blender or two knives until mixture resembles coarse meal.


4. Add water and oil, stir until a soft dough forms.


5. Divide dough in half. On a greased baking sheet, use a floured rolling pin to roll out half of dough into a 10-by-14-inch rectangle.


6. Sprinkle 1 tbs. sesame seeds evenly over dough and use rolling pin to press seeds into dough.


7. Cut dough into 2-inch squares with a sharp knife or pizza cutter. Repeat for remaining dough and sesame seeds.


8. Bake 15 to 20 minutes or until edges are light brown and crackers are crisp. Cool completely on a wire rack, and store in an airtight container. This recipe yields about six-dozen crackers.
