Mix Mashed Potatoes & Corn Together

Left over corn and potatoes can be made into delicious meals.


Mashed potatoes and corn taste delicious when you simply mix them together, but there are a couple, more fancy ways, of dressing up this combination. Serve corn and mashed potatoes together as shepherd's pie or as potato pancakes. These dishes are basic to prepare and are tasty, giving your friends and family a meal they'll enjoy.


Instructions


Shepherd's Pie


1. Cook 1 pound of ground beef thoroughly in a frying pan. Mix the cooked ground beef and 1 can of mushroom soup together. Pour the mixture into a 9-by-9-inch casserole dish and spread it evenly along the bottom.


2. Mix a can of corn and 3 cups of mashed potatoes together. Spread the potato and corn mixture over the ground beef in the casserole dish.


3. Grate 2 cups of cheese and sprinkle over the potatoes and corn. Put the casserole dish in the oven at 425 degrees Fahrenheit. Bake for about 15 minutes or until the shepherd's pie is hot through and the cheese is melted and sizzling. Remove it from the oven and let it cool for 5 to 8 minutes before serving.


Potato Pancakes


4. Fry 2 cups of diced onions in a frying pan with 2 tablespoons of olive oil and 2 tablespoons of butter until the onions caramelize.


5. Mix the fried onions, butter and oil together with 2 cups of potatoes, 1 can of corn, 1/2 cup of flour, 1 cup of grated cheese, 1 egg and 1 teaspoon of salt. Make pancakes out of the mixture about 3 inches in diameter and 1/2 an inch thick.


6. Put 3 tablespoons of olive oil in a pan and fry the potato pancakes until they are golden brown. Serve these for breakfast or as a lunch or dinner side.
