Cook Pork With Mustard Sauce

Cook roast at 325 degrees.


Pork, which is 23 percent leaner and 26 percent lower in cholesterol than it was a dozen years ago, is an option for people watching their fat intake. A pork shoulder is a basic roast to cook, and it comes in three cuts: blade, butt and picnic. Each cut varies in fattiness and tenderness, but the cooking method will remain the same. A mustard sauce can be rubbed onto the roast during cooking to add extra flavor.


Instructions


1. Preheat oven to 325 degrees.


2. Prepare mustard sauce. Combine 1/4 cup honey, with 2 tbsp. of Dijon mustard, 1/2 tsp. thyme and 1/2 tsp. salt in a small bowl. Mix until blended. Add pepper to taste.


3. Place roast in a large roasting pan.


4. Use a small brush to cover the roast with mustard sauce.


5. Place roast in the oven and bake until the internal temperature of the roast reaches 170 degrees. Cooking time is approximately 30 minutes per pound.


6. Take the roast out of the oven and let it stand for 15 minutes before slicing.
