Make Quick And Easy Turkey Meatloaf

Pair meatloaf with a healthy serving of vegetables for a more balanced meal.


Meatloaf is a staple of American cooking, and although it requires at least an hour to bake it is fairly easy to prepare and requires very few ingredients. By replacing the ground beef in traditional meatloaf with ground turkey you can give this classic recipe a healthy new twist, and by using seasoned stuffing mix instead of bread crumbs for filler, you cut out most of the guesswork when it comes to seasoning your dish.


Instructions


1. Empty 1 whole box, or approximately 3 cups, of your favorite stuffing mix into a large zip-lock bag. Using a rolling pin, gently crush the stuffing until it reaches the consistency of bread crumbs.


2. Empty the stuffing into a large mixing bowl and add 2 pounds of thawed ground turkey, 1 whole egg and 1/2 tablespoon each of salt and pepper.


3. Mix the ingredients thoroughly, using your hands or a spatula, and transfer the mixture into a metal or glass bread pan. Preheat your oven to 350 degrees Fahrenheit.


4. Cover the top of the meatloaf with a thin layer of ketchup, barbecue sauce or cheese, if desired, and place the pan in the oven.


5. Cook your meatloaf for approximately 1 hour, and use a meat thermometer to ensure the internal temperature is at least 160 degrees Fahrenheit. Let it sit for a few minutes before cutting and serving. Refrigerate any leftovers immediately.
