Easy Brunch Ideas For Mom

Mom deserves delicious brunch food, even if it's easy to make.


Whether celebrating Mother's Day or just surprising her on a day off, making brunch for Mom is a fun way to spend a morning. While some people go to great lengths to make elaborate dishes, several easy recipes look just as fancy and are sure to impress the most important lady in your life. Even those who don't usually cook can find simple, fun recipes to surprise their mothers.


Apply-Blueberry Corn Muffins


Apple-blueberry corn muffins sound impressive but are surprisingly easy to make. Start early, as they must bake in the oven for 20 minutes before serving. Preheat the oven at 375 degrees F and grease six muffin cups. Mix egg whites from two large eggs, 1/2 cup unsweetened applesauce and one pack of corn muffin mix, which should be 8 1/2 oz. of mix. Stir in 1 cup of blueberries and pour the mixture into the muffin cups. Bake for 20 minutes. Top it off with a dollop of cream cheese (fat-free or otherwise).


French Toast


French toast is easy to make with a few simple ingredients. Beat three eggs with 1 1/4 cup milk, 1 tsp. vanilla and a touch of ground cinnamon in a bowl. Soak both sides of thick pieces of bread---preferably French bread or cinnamon bread, but any you have on hand will do---in the mixture. Cook on a frying pan for two to three minutes on each side, until they darken to golden brown. Place on a plate and sprinkle powdered sugar on top. Add a few strawberries and blueberries and serve with maple syrup.


Citrus Salad With Honey and Mint


Sliced fruit with a honey drizzle makes a refreshing side dish for brunch. Slice a grapefruit and a navel orange and dropping them in a bowl. Pour 2 tsp. honey on top and add four sprigs fresh mint as garnish. Other fruits also make tasty side dishes if they're handy, with or without garnish.


Mango Iced Tea


Every brunch needs a beverage -- try mango iced tea for a non-alcoholic drink with a kick. Simply combine 1 cup brewed and chilled green tea, 1/4 cup mango juice and 1 tsp. honey. Stir it up and serve it to Mom in lieu of (or alongside) her morning coffee.
