Make Oriental Calamari

Make Oriental Calamari


Calamari, also known as bigfin reef squid, is a cephalopod commonly served in restaurants all over the world. They live primarily in warm waters from the Hawaiian Islands to Australia and Japan. They are often used in Mediterranean dishes, both deep fried and baked. This recipe prepares six servings of oriental calamari with vegetables.


Instructions


1. Thaw the frozen calamari in the refrigerator, and then slice it into thin rings. Pat the rings dry with paper towels, and heat the olive oil in a large saucepan over medium-high heat.


2. Transfer the calamari rings to the hot saucepan, and fry for 4-5 minutes, or until the rings turn white and begin to stiffen. Remove the calamari from the saucepan with a slotted spoon and set aside.


3. Add the chopped spring onions, chopped onion, crushed garlic cloves and sliced mushrooms to the saucepan. Toss the ingredients until they are all coated with oil, and then sprinkle the flour into the pan.


4. Pour the chicken stock into the pan, followed by the wine, soy sauce, grated ginger root, lemon juice and the calamari. Cover the saucepan and reduce to medium-low heat.


5. Simmer the ingredients for 50 minutes, stirring once every 10 minutes. Remove the ingredients from heat and serve immediately over a bed of steamed rice.
