Bake Muffin Tops


Muffin tops have all of the flavor of the muffin with a larger browned surface. Specialty muffin top pans sold at cooking stores let you make a batch of muffin tops from your favorite muffin or quick bread recipe without making and wasting the bottom half of the muffin. If you cannot find a muffin top pan, use the shallowest muffin pan available or use the alternative muffin top recipe below.


Instructions


1. Preheat the oven to 425 degrees Fahrenheit. Coat the muffin top pan or cookie sheet with cooking spray.


2. Add flour to your muffin batter one tablespoon at a time until the batter becomes stiff and thick enough to spoon rather than pour.


3. Completely fill the muffin top pan wells with the batter, or drop tablespoonfuls of muffin batter onto the cookie sheet with two inches between each muffin.


4. Bake the muffin tops at 425 degrees Fahrenheit for seven to nine minutes on a cookie sheet, or for 10 to 12 minutes in the muffin top pan. Decrease the oven temperature to 375 degrees Fahrenheit after the first seven minutes if baking in a muffin top pan.


5. Test the muffin tops by putting a knife into the center of the muffin top in the middle of the pan. When the knife emerges cleanly, then pull the muffin tops from the oven.


6. Let the muffin tops cool completely on the cookie sheet or in the pan before serving.
