Puree Spinach With Curry

Add curry to pureed spinach for a healthy and delicious dip or filling.


Spinach can be pureed to a smooth, creamy texture for a nutritious and flavorful dip or filling in a variety of dishes. For spinach to reach the proper consistency, it must be softened before you puree it. Once prepared, add curry to pureed spinach to serve as a dip with crackers, toast or chips, or for a filling in other food items such as deviled eggs.


Instructions


1. Remove the stems from your spinach leaves by folding them in half lengthwise and cutting or tearing them away. Rinse the leaves under a steady stream of water.


2. Place the leaves in a pan with 1 tbsp. of water. Warm over low heat for 1 to 2 minutes until the spinach leaves begin to wilt.


3. Remove the pan from heat and drain away any excess water. Put the spinach in your food processor or blender.


4. Puree your spinach in the food processor blender for 2 minutes, or until it is smooth and creamy.


5. Mix 4 tbsp. unsweetened plain yogurt with 3 tbsp. chickpea flour. Once it is smooth, mix in the remainder of the 1 1/4 cups unsweetened plain yogurt and the pureed spinach.


6. Heat 2 tbsp. vegetable oil in a pan on medium low heat. Add 1/2 tsp. chopped garlic, 1/4 tsp. chopped red pepper and a pinch of curry and cook for 30 seconds.


7. Add the spinach mixture and 1/2 cup water to the pan. Mix the ingredients together until blended and continue cook over medium heat for 15 minutes. Serve hot.
