Freeze Parmesan Cheese

Freeze Parmesan cheese to keep it for several months.

Cheese is generally not a good candidate for freezing. The freezer destroys cheese's natural texture, making it unsuitable for many uses. Parmesan is something of an exception to this rule, as it is not a cheese you would normally slice and eat plain anyway. You can freeze grated Parmesan cheese for up to three months and solid chunks of Parmesan for up to six months with proper care. Do not use your thawed Parmesan to finish dishes; instead, incorporate it in the cooking process.

Instructions

1. Seal the original package the grated Parmesan cheese came in as tightly as possible if you purchased pre-grated cheese. If you are freezing Parmesan cheese that you grated yourself, put it into a resealable plastic freezer bag and remove as much air as possible, then seal.

2. Wrap a block or chunk of Parmesan cheese in wax paper or parchment paper, then in a layer of plastic wrap. Wrap the cheese snugly and securely, and do not leave any gaps in either of the wrapping materials.

3. Place the sealed Parmesan cheese into the freezer. Freeze blocks or chunks for up to six months, and grated Parmesan cheese for up to two months.
