Cook African Food

Africa has many cultures and languages. Foods, while named differently, are common throughout Africa. Most households have a kitchen housed in a separate building. Stews are commonly cooked in large kettles over a fire. Foods such as yams, okra, sweet potatoes, black-eyed peas, cabbage, corn and groundnuts are mixed into stews. Sometimes chicken, pork, beef, or fish are added. Spices like pepper, cloves, garlic, turmeric, cardamom and curry season the stews. Here is a basic African stew of mixed vegetables to get you started. You can experiment with different vegetables, meats and spices to find your own favorite taste.


Instructions


1. Finely chop onions. Crush garlic with the side of knife.


2. Set aside the tomatoes. Cube all the remaining vegetables into large chunks. Select from common vegetables used in Africa such as potatoes, carrots, green beans, okra, yams, cabbage, corn, sweet potatoes. Mix and match the vegetables of your choice. Measure 3 cups of cut vegetables.


3. In your kettle, saute the onion and garlic with the berbere, paprika and oil for a couple of minutes before adding the remaining vegetables.


4. Dice your tomatoes and stir them into the stew. Add the vegetable stock and tomato paste. Let your stew come to a boil on high heat.


5. Once the stew comes to a boil, lower the heat and cover to simmer for 15 minutes.


6. Add the parsley to your stew. Use salt and pepper to season before serving.
