There are dozens of different sausages in the average grocery store. While many sausages have distinct flavors that don't translate well if cooked in different ways, Polish kielbasa is mild enough to be versatile. This plain-tasting sausage can be a good base for foods in many different styles, and the flavor is so mild that it can pick up other spices and tastes from the foods around it.
With Pasta
Slice Polish kielbasa into rounds and brown it in a pan with some onions and garlic. Add this mixture to any shape of pasta you like, along with cooked red and green peppers and marinara sauce. This meal appeals to younger children who might be put off by the stronger flavor of Italian sausages, while being flavorful enough for the adults in the family.
Classic Sauerkraut Bake
Turn the classic Polish kielbasa and sauerkraut into an autumn casserole. Line the bottom of a casserole dish with a layer of drained sauerkraut. Top it with sliced rounds of kielbasa, chunks of red skin potatoes, baby carrots and wedges of cored apple. Bake the casserole in a medium oven until the vegetables are soft and the kielbasa has begun to brown, and serve it with crusty bread or baking powder biscuits.
Breakfast
Cut lengths of kielbasa into 1/4 inch cubes. Brown the sausage cubes in a pan, then add beaten egg. Scramble the eggs and kielbasa together until the eggs are set. Sprinkle on some shredded cheddar or Muenster cheese right before you remove the eggs from the pan. Serve this mixture with toast, in a pita pocket, wrapped in a flour tortilla or in a large breakfast with pancakes and fruit.
Appetizers
Slice Polish kielbasa into rounds 1/4 inch thick. Heat the sausage coins in one of the classic meatball appetizer sauces, like ketchup or cranberry sauce. Offer plastic swords to spear the sausage circles.
Brown the sausage circles in a pan and turn them out onto a paper towel to drain the grease. Pile the sausages on a serving tray next to cheese cubes, olives, crackers and fruit pieces for an attractive appetizer tray for snacking.
