Fondue pots are made with thick bottoms that withstand an indirect heating source to melt cheese and chocolate. The warming element can be used to warm other liquids such as soups, fried meats and butter-based dipping sauces.
Soup
Pour soup into the fondue pot and light a burner or candle under the warming unit. It may take a while to warm the soup through, so hot soup can be added to the fondue pot and then kept warm. Guests can serve themselves with small ladles.
Meats
An electric or metal fondue pot is perfect for grilling or frying meats. Peanut oil and olive oil work well. Meat must be trimmed and dried before cooking in a fondue pot to reduce splattering. If simmering meat in broth, match broth to meat. For example, beef should be simmered in beef broth.
Butter Dipping Sauces
Butter mixed with fresh garlic, herbs and spices warms well in a fondue pot. Steamed vegetables or chunks of hard bread dip well. A classic butter recipe is bagna cauda, in which butter is warmed with garlic, anchovies and olive oil.
