Make Sweet Onion Marmalade

Sweet onion marmalade, made with delicious onions and tangy Granny Smith apples, is luscious served with juicy steak, pork or chicken. Give this unusual spread a try on some hot pizza or a slice of hot and crusty bread. It's bound to be a huge success. Sweet onion marmalade is low-fat and healthy, too.


Instructions


1. Place the extra virgin olive oil in a saute pan and heat it over medium heat.


2. Add the sweet onions and the mustard seed and, stirring occasionally, cook the mixture until the onions are tender and golden, approximately 10 minutes.


3. Stir in the chicken or vegetable broth and the apple juice, and with the heat turned to high, bring the mixture to a boil. Add the diced apples, salt, freshly ground pepper and ground allspice, and stir the mixture until the ingredients are completely blended.


4. Turn the heat down to medium-low and simmer the sweet onion marmalade uncovered for approximately 12 minutes, until the apples are soft.


5. Remove the mixture from the heat and mix in the fresh parsley.


6. Place the mixture in a sealed container and store it in the refrigerator for up to a week. Serve the sweet onion marmalade at room temperature.
