Make Homemade Chicken Soup From Scratch

Instructions


1. Plug in the crock pot and pour in two quarts of water.


2. Place the whole chicken into the crock pot. Use a 2 to 3 lb. fryer.


3. Add the onions and garlic to the pot. Cover it and turn it on its highest setting. Let the chicken, onion and garlic cook in the water in this manner for two hours.


4. Remove the entire chicken, carefully, from the crock pot. Place it on the large platter.


5. Stir the salt and rice into the chicken stock. Add the mixed vegetable combo. Cover and let it simmer for 30 minutes while the chicken cools on the plate.


6. Remove the meat and skin from the bones of the whole chicken after the bird has cooled for 30 minutes. Add the meat and skin to the soup mixture in the crock pot. Discard the bones. Use the chicken skin, because it adds more flavor to your homemade soup--it disintegrates into the stock as it cooks, making a delicious, flavored stock.


7. Turn the crock pot to its lowest setting after adding the chicken and skin to the soup. Let the soup cook for an additional 30 minutes and serve.
