Much like modern day dining, Ancient Romans ate three meals a day, called jentaculum, prandium and coena, very similar to today's breakfast, lunch and dinner. The coena was the main meal of the day and could last for hours. The most famous chef of ancient Rome was Apicius, who wrote the De Re Coquinaria, the only surviving cookbook of the day. Ancient Roman dishes typically consisted of garum, a salted fish sauce, and a meat, typically pork. Antica Pesa


Antica Pesa is located in the former customs office of the Papal State. This restaurant, in Trastevere, began as a 17th-century snack bar for customs officers. By the 19th century, the location opened its doors to the public and Antica Pesa was born.

The Restaurant Checchino dal 1887 has been open for over a century and continues to serve much the same cuisine as when its doors opened. Following historical traditions, this restaurant, located in Testaccio, still utilizes most parts of an animal. For example, pig dishes served include the heart, liver, tail and lungs.
