Make Mixed Vegetable Rice

Mixed vegetable rice is a simple but tasty dish. Fresh vegetables are ideal when there is enough time to slice or dice them but frozen mixed vegetables reduce the work when one needs a meal in a hurry. You may use the fresh or frozen vegetables of your choice but consider adding carrots, peas or sweet corn if you want a touch of sweetness. It takes about 45 minutes to prepare this dish.


Instructions


1. Pour a cup of rice into a sieve and place the sieve in a bowl. Place the sieve and bowl under a stream of cold running water for a few minutes to wash some of the starch off.


2. Take the sieve out of the bowl, pour the water in the bowl out and place the sieve back into the bowl to drain the rest of the water off the rice.


3. Dice the onions into medium-sized chunks.


4. Place a pot on a medium flame. Pour 1 tablespoon of vegetable oil into the pot and wait for it to heat up.


5. Pour ¼ cup of cumin seeds into the hot oil. When the cumin seeds begin to pop, add the onions.


6. Fry the onions until they are translucent. Add a cup of mixed vegetables and the garam masala then stir.


7. Pour the rice into the pot and stir.


8. Pour 1½ cups of water into the pot and cover it. Make the flame high until the water begins to boil. Reduce the flame to low and let the rice simmer for about 15 minutes.


9. Stir the rice and then cover the pot, leaving a slight opening. Turn the flame off. Let the rice sit for about five minutes before you serve.
