Fried egg sandwiches are one-pan meals that you can serve for breakfast, lunch or dinner. By adding the dairy and vegetables to the proteins and grains of the egg sandwich, you have a complete meal between two slices of bread.Serve this fried egg sandwich with a side of baked potato wedges or a bowl of freshly sliced fruit for a nutritious meal.
Instructions
1. Fry a patty of spicy pork sausage in a saut pan until the sausage is fully cooked and contains no pink in the center. Set the sausage patty aside but leave the grease drippings in the saut pan.
2. Toast two thin slices of bread that is crusty and is covered with holes and crevices, such as sourdough bread. Smear 1 tbsp. of unsalted butter over both sides of the toasted slices of bread.
3. Place the cooked sausage patty on one piece of bread and two thin slices of aged cheddar over the sausage.
4. Melt 1 tbsp. of unsalted butter on medium-high heat in the same pan containing the sausage drippings until the foam of the butter has subsided.
5. Crack two large eggs and carefully drop the raw eggs in the hot grease. Sprinkle a few shakes of poultry seasoning, such as Old Bay, over the eggs. Cook the eggs until the whites turn glossy. Slide a spatula gently under the sides of the eggs to ensure the eggs are not stuck to the pan, and then flip each egg carefully so the yolks do not burst.
6. Let the eggs cook for 30 seconds on this side. Slide the eggs one at a time on the uncovered slice of bread. Slice a knife through the yolks so they run into the bread to be absorbed rather than explode when you bite into the sandwich.
7. Top the eggs with four to six leaves of arugula, depending on how many leaves it takes to form a single layer over the eggs. Place two thin slices of tomato on the arugula and salt and pepper the tomato to your taste preference.
8. Flip the toast covered with sausage and cheese over and place squarely on top of the tomato. Press the sandwich together before slicing across diagonally; eat immediately.
