Roast Red Peppers In The Oven

Roast red peppers in the oven.


Roast your own red peppers at home to use in all of your favorite spicy recipes. It's a fairly simple and straightforward process using your oven's broiler. Roasting the peppers gives them an intense smoky flavor. This process works for most pepper varieties and is especially good for green or red chilies. This is also a great method for roasting bell peppers.


Instructions


1. Turn your oven broiler on low to preheat.


2. Wash the peppers thoroughly and pat dry with a paper towel. Arrange them in a single layer on a metal baking sheet.


3. Place the baking sheet under the preheated broiler. Watch the peppers closely as the skins begin to turn brown and blister. Do not char the skin of the peppers to the point that they turn black.


4. After 1 minute or so, remove the pan from the oven and carefully turn hot peppers over to expose the other side. Return to the oven and continue to roast them.


5. Once the peppers are brown and blistered, remove them from the oven and place in a quart- or gallon-size zip-close plastic bag. Seal the bag and let the roasted peppers steam at least 15 to 20 minutes.


6. Remove the peppers from the bag and the brown and blistered skins should easily slip away. At this point, the whole roasted peppers can be chopped and left with the seeds in place or sliced open and deseeded.
