1. Check out cake decorating supply stores for a wide variety of plastic molds and accessories. These stores cater to cake decorators who use inexpensive molds when adding details to a customer's cake, and you can pick from a wide variety of styles.


2. Try restaurant supply stores to find chocolate molds that produce numerous candies at one time. Manufactured in large polycarbonate or metal sheets, these molds allow the confectionery artist to fill dozens of indentions at the same time.


3. Buy polycarbonate molds if you need to fashion gourmet chocolates many times from one mold. Polycarbonate provides an extremely smooth surface that helps molded chocolates look smooth and perfect. If cared for as recommended by the manufacturer, these molds will last many years.


4. Purchase silicone molds to remove the candy easily. These molds go from counter to freezer while maintaining their flexibility. After chilling, just turn the filled mold upside down and pull gently, and your finished chocolates will fall right out.


5. Look for rubber molds, which are flexible but cost less than silicone. Rubber molds don't last as long; but if you need them only a few times, you'll pay much less and still have a good product.


6. Use either plastic or polycarbonate to mold elaborate chocolate boxes. These boxes are all the rage at bridal and baby showers, and you need a hard mold to form them properly.
