Cook Prime Rib

The search for the perfect piece of meat has ended. The grade is "Prime", the meat is "rib" and the fat is marbled throughout the entire cut. Here is the perfect rub and recipe for cooking prime rib.


Instructions


Make the Rub


1. Combine, garlic, basil, oregano, parsley and olive oil.


2. Blend in a food processor or blender until smooth.


3. Spread evenly over all the surfaces of the meat.


4. Rub into meat until the meat seems to absorb any dripping, but is still moist.


Cook the Prime Rib


5. Coat the entire piece of prime rib in rock salt to create a crust.


6. Place in a shallow pan.


7. Insert the meat thermometer into center of prime rib.


8. Place in an unheated oven with roast sitting in the center of the middle shelf.


9. Cook the prime rib with the oven set to 250 degrees until the meat thermometer reads 110 degrees. Depending on the size of meat, this could take 2 to 3 hours. It is more important to watch the temperature than the clock.


10. Remove the prime rib from the oven and carefully brush the salt crust away.


11. Allow the meat to stand uncut until the temperature stops rising.


12. Carve and enjoy.
