Cook With Rock Salt

Rock salt hasn't been processed to remove impurities, as with table salt.


Rock salt contains impurities, mostly minerals that are removed from salt used in food. You can use rock salt labeled as food-grade in cooking, such as ice cream salt. Unless it's labeled as edible, you can't use it as an ingredient in food. Cook with rock salt by using it to cover food, such as whole potatoes, meat and fish while it cooks. The salt forms a crust around the ingredient, which will hold moisture in as the food cooks. It will also impart an evenly disbursed salty taste.


Instructions


1. Preheat your oven to 400 degrees.


2. Line the entire bottom of a roasting pan with rock salt. Spray the salt with just enough water to moisten all of it.


3. Lay the food you want to cook on top of the rock salt


4. Pour more rock salt around the sides and on top of the food. Make sure the food is completely covered with salt.


5. Use the spray bottle to thoroughly moisten the added rock salt.


6. Cook the food in the oven as you usually would. Generally, for compact cuts of red meat cooked to medium, cook 18 to 20 minutes per pound. Whole fish will generally take between 30 and 45 minutes, depending on the size.


7. Remove the food from the oven. Crack open the salt shell to remove and serve the food. Rest red meat and pork for 20 to 40 minutes, and whole fish for 10 minutes, in the salt shell before cracking the salt shell with a hammer and removing the food.
