Juice Celery Root

Celery root produces a nutty juice.


Celery root is a bulbous vegetable with a thick brown skin, also called celeriac. It's known for it's nutty flavor and rustic appearance. Celery root has a high potasium level and is a natural diuretic. After peeling and cutting, celery root can be run through an electric juicer the way you'd juice any other fruit or vegetable. It makes a good combination with other vegetable juices.


Instructions


1. Peel the celery root prior to juicing it to avoid pith in your juice. Cut a thin layer from the top and bottom of the root. Stand the root on one of the cut ends and use a knife to remove the rest of the peel in thin layers from the sides. Cut from the top to the bottom, sliding the knife along the curve of the root.


2. Cut the peeled root into 1- to 2-inch pieces. Pass these pieces through a juicer.


3. Add celery root in moderate amounts to other juices for a nutty flavor. Celery root is a good source of potassium. It is also a natural diuretic and should be used in moderate amounts.
