Pancake Mix Directions

Serve pancakes with fresh fruit in the morning.


Soft and fluffy pancakes are a savory way start to any day. Whether they are buttermilk, wheat or plain pancakes, they are sure to please. Make pancake mix from scratch at home and store in a cool, dry place. Then surprise everyone with homemade pancakes during the week or weekend. Drizzle homemade pancakes with sweet strawberries, blueberries, or thick maple syrup for an enjoyable breakfast meal.


Instructions


1. Combine 3 cups of flour, 2 tbsp. of baking powder, 6 tbsp. of sugar and 1 1/2 tsp. of salt in a 3-quart mixing bowl and mix together with a whisk. Then put 2 cups of the pancake mix into a 2-liter plastic food container. Cover and store in a cool, dry place. About 1 1/2 cups of pancake mix will remain in the mixing bowl.


2. Add 1 cup of milk, 2 tbsp. of melted butter and one large egg to the mixing bowl. Mix all ingredients together to make pancake batter. Add in 1 cup of fruit such as bananas or raspberries, if desired, and mix.


3. Pour 1 tsp. of vegetable oil into a medium-sized skillet, and place the skillet over medium heat. Move the pan around to cover the inner surface with the vegetable oil.


4. Ladle 3 tbsp. of batter into the skillet. Use the back of a spoon to form the batter into a circle inside the skillet. The pancake batter will yield an estimated 10 pancakes. Pancakes may be larger if fruit is added.


5. Wait for 3 minutes or until the batter in the skillet begins to bubble, and the bubbles burst. Then flip the pancake over with spatula and leave for an additional three minutes. Remove and serve pancakes on a plate.
