Make Lemon Roasted Chicken With Apricot And Plum Sauce

Lemon roasted chicken with apricot and plum sauce is a recipe with origins that can be traced to the big cities of China, when it is often served during the holidays as a special dinner or banquet appetizer. Common Chinese ingredients such as soy sauce, ginger and white pepper are used to make a marinade while honey, prepared plum sauce and apricot jam make a wonderfully delicate yet bold gravy that can be poured over the chicken before serving. Lemon roasted chicken with apricot and plum sauce makes a delicious, satisfying meal when served over a bed of wild rice and paired with a crisp green salad.


Instructions


1. Wash the chicken thoroughly and pat dry with paper towels. Place the chicken in a large baking dish and preheat the oven to 350 degrees F.


2. Combine the soy sauce, salt, sugar, MSG, white pepper, sherry and ginger in a small mixing bowl. Rub this mixture over the chicken, reserving 2 tbsp. for the inside of the chicken. Cover and refrigerate for two hours to marinate.


3. Rub the chicken with the canola oil and place it in the hot oven .Cook for 38-45 minutes or until the skin is lightly crispy. Remove the chicken from the oven and cut it into pieces.


4. Heat 2 tbsp. canola oil in a small saucepan until extremely hot. Add the honey, plum sauce, apricot jam and lemon juice to make gravy. Reduce the heat to low and simmer for three to five minutes.


5. Place the chicken pieces on individual serving plates or on a large platter. Garnish with the sliced cucumber, tomatoes and red chilies. Pour the gravy over the chicken or serve on the side.
