Make a Deviled Egg


Easy and inexpensive to make, deviled eggs are a staple at parties and celebrations. These appetizers are versatile and a good option if you have to make an appetizer on short notice. An infinite number of recipe variations means that you can make your recipe special by adding your own extra touches. And making deviled eggs is an easy first cooking experience for kids.


Instructions


1. Place the 12 eggs in a pot of cold water and use medium heat to bring the water to a boil.


2. Turn off the burner when the water begins to boil and cover the pot with a lid. If you are using an electric stove top, you may want to move the pot to another burner, as electric burners tend to stay hot for some time after being turned off.


3. Set your timer for 12 minutes. When the time has elapsed, carefully pour off the water in the pot and run cold water over the eggs.


4. Keep the eggs in the cold water for 10 minutes. Soaking the eggs in cold water will make them easier to peel.


5. Remove the eggs from the water, carefully crack the shells and peel. If you crack the ends of the eggs first, you may find that it is easier to remove the shells from the rest of the eggs.


6. Cut the eggs in half lengthwise and scoop out the yolks with a teaspoon. Be very careful not to break the egg whites as you remove the yolks.


7. Mash the egg yolks in a bowl and mix them with the mayonnaise, the Dijon mustard and the green onion. If desired, add 1 tsp. of paprika. Depending on your preference, you may prefer to sprinkle the paprika on top of each finished egg rather than including the paprika in the mixture.


8. Scoop the yolk mixture into the cavities of the eggs and serve. If you are not serving the deviled eggs immediately, be sure to refrigerate them.
