Keep Unused Egg Yolks Fresh

Some egg recipes involve plenty of guesswork, which makes it easy to end up with leftover cracked eggs. Most of the time, these eggs are written off as a loss and are simply thrown away. But with this handy trick, you can save the yolks and use them again another day.


Instructions


1. If you haven't already separated the egg yolks from the egg whites, separate them first. The egg whites will not keep as well as the yolks, regardless of how you store them.


2. Put the yolks in a small bowl. Then pour vegetable oil over the top, using just enough to completely cover the tops of the yolks. About 2 tbsp. will usually do it. This creates a great airtight seal, preserving the eggs almost as well as they were preserved inside the shell.


3. Cover the bowl in plastic wrap and place in the refrigerator. Plan to use the yolks within two days, just to be safe.


4. When you're ready to use the yolks, use a spatula or another flat kitchen tool to hold the yolks inside the bowl while you tip it over the sink and drain out the oil. Now it's time to enjoy your salvaged eggs.
