Make Low Fat Mayonnaise

Substitute non-fat yogurt for the low-fat cottage cheese.


Mayonnaise is the creamy sauce that adds flavor to several comfort foods. Mayo lovers are 25 percent more likely to use the condiment over any other and it is consumed far more by women than men, according to the Association for Dressing and Sauces. Create a homemade, low-fat mayonnaise that will rival its store bought competition, and wow your family with its taste and texture.


Instructions


1. Pour 2 cups of cool water and 1 tbsp. corn starch into a medium-sized saucepan.


2. Stir the ingredients until they are well incorporated and bring the mixture to a boil on high heat.


3. Continue to boil the mixture for 2 to 3 minutes and remove the mixture.


4. Pour 1/2 cup low-fat cottage cheese and 1/4 cup olive oil into a large bowl.


5. Stir the ingredients and add 1 tbsp. apple cider vinegar and 1 tsp. table salt.


6. Pour the water and corn starch mixture into the bowl. Stir the ingredients until they are incorporated.


7. Spoon the mixture into an airtight container and refrigerate for 24 hours. This will allow the mayonnaise to become more firm.


8. Refrigerate and enjoy the low-fat mayo for up to one week.
