Make Hominy Casserole

Hominy is a staple in Southern kitchens, but in other regions, many cooks are unfamiliar with hominy. Hominy, simply put, is corn without the germ. Hominy casserole is a departure from the standard bowl of whole-kernel corn served at many meals in homes around the country, yet it is familiar enough to appeal to picky eaters and exotic enough to appeal to those with more refined palates.


Instructions


1. Preheat oven to 325 degrees F.


2. Peel and finely chop 1 medium onion.


3. Saute onion in a non-stick skillet in a stick of butter until the onion becomes translucent.


4. Reserve the butter wrapper.


5. Transfer onion cooked in butter to a large mixing bowl.


6. Add 2 can of drained yellow hominy, 1 can of cream of mushroom soup, 1 small jar of pimento and 1 cup of finely grated mild cheddar cheese to the mixing bowl containing the onion cooked in butter.


7. Stir contents of the bowl, mixing well.


8. Pour hominy casserole mixture from the mixing bowl into a greased 2-quart casserole dish. You may use the paper the butter was wrapped in to grease the casserole dish.


9. Bake hominy casserole for 25 to 30 minutes in a 325 degree oven.


10. Serve hominy casserole hot as a side dish with any meat or poultry. Delicious!
