Make Beef Satay

This beef will knock you over with its incredible flavor combination. It makes a wonderful appetizer for six to eight people, or a main dish for four.


Instructions


1. Stir together one cup coconut milk, chili sauce, two tbsp. fish sauce, coriander and two tbsp. sugar in a large bowl.


2. Slice the beef into thin strips about two inches long.


3. Add the meat to the marinade, stir well to coat, cover, and refrigerate at least three hours or overnight.


4. When you're ready to cook, heat the remaining coconut milk and the curry paste in a small saucepan for four minutes, stirring, over medium heat.


5. Remove sauce from heat and allow to cool. When cool, pulse with the remaining fish sauce, remaining 3 tbsp. sugar, peanut butter, soy sauce, and ginger in a food processor. Set aside.


6. Heat a grill to medium.


7. Thread the meat onto skewers. Grill the skewers until just done, about four minutes.


8. Serve the skewers with the sauce on the side.
