Make Boston Baked Beans

You don't have to live in Boston to enjoy good old-fashioned Boston baked beans. Serve them with your favorite bread or biscuits so you have something to scoop up the delicious sauce. Start the day before to allow enough time to soak the beans. This recipes serves 6 to 8 people.


Instructions


1. Place the beans in a large saucepan and soak them overnight in cold water.


2. Bring the beans to a simmer in the same water in which they were soaked. Simmer them for about 1 to 2 hours. Drain the beans and save the liquid.


3. Cut the bacon into small pieces and finely dice the onion.


4. Layer the beans in a 2-qt. casserole dish, alternating the layers with bacon and onion.


5. Mix the maple syrup, Worcestershire sauce, salt, pepper, dry mustard, barbecue sauce or ketchup, and brown sugar in a large saucepan. Place the mixture over medium heat and bring it to a boil.


6. Pour the hot mixture over the beans and cover the casserole dish.


7. Bake the beans at 325 degrees F for 1 1/2 hours.


8. Remove the lid and continue cooking another 1 1/2 hour or until tender. Add some of the reserved liquid if they get dry.
