Roasted edamame is a delicious and healthy snack.
While the word soybeans usually conjures up images of blocks of curd, or tofu, or the creamy liquid of soy milk. However, the green pods of edamame, or immature soybeans, are another popular form of consuming this healthy vegetable. The beans have been eaten for over a thousand years in the Chinese culture and for several hundred years in other Eastern cultures. High in fiber, protein and antioxidants, edamame is a delicious power food that is easy to roast and prepare.
Instructions
1. Preheat the oven to 375 degrees Fahrenheit.
2. Place the edamame in the large bowl.
3. Drizzle the olive oil over the edamame and toss them to coat them thoroughly in oil.
4. Sprinkle the salt over the edamame beans evenly, continuing to toss them to evenly season them.
5. Place the edamame evenly over the baking sheet, spreading them so they are only one bean deep.
6. Insert the baking sheet into the oven and roast the beans for 6 minutes, or until slightly browned.
7. Remove the beans and flip them over.
8. Insert the baking sheet back into the oven and roast for another 6 minutes, or until they are browned on the other side.
9. Place the edamame in a serving bowl and eat them when cool enough to touch by popping the beans out of the pods.
