Chicken & Balsamic Salad

Enjoy a wholesome meal with this easy chicken and balsamic salad.


This quick and easy chicken and balsamic salad makes for a hearty and nutritious meal. It is a low calorie, tasty salad that is ideal even if you are on a diet. The balsamic vinegar dressing lends a piquancy that enhances the flavor of the chicken, minus the fat and salt.


Instructions


1. Cut each chicken breast into 3-inch cubes and set aside.


2. Finely chop the garlic and thyme and place in a bowl. Add 2 tbsp. of olive oil and mix. Dip the chicken cubes in this mixture and coat thoroughly.


3. Heat olive oil in a large, non-stick frying pan over medium heat. Add the chicken and cook on both sides for 10 minutes or until golden brown.


4. In a large bowl, combine the cooked chicken with salad vegetables. Mix finely chopped baby spinach, onion and cherry tomatoes with the chicken.


5. Prepare the salad dressing. Mix 1/4 cup olive oil, balsamic vinegar, sugar and cinnamon in a small bowl. Pour this dressing over the chicken and vegetables. Gently toss the salad and serve immediately.
