Marinate Chicken In Yogurt

Yogurt marinades are popular in Indian cooking.

Marinades can infuse flavor, tenderize meats and even make them juicier. Different types of marinades provide different results. If tenderizing chicken is your objective, then consider using yogurt to get the most tender meat possible. You'll have to plan ahead to get the full benefit of the yogurt mixture. For this kind of marinade you'll need at least an hour, but preferably the meat should rest overnight. Don't skimp on flavor - you'll need to use yogurts that contain fat.

Instructions

1. Set a glass baking dish aside to hold your marinated chicken. Place 1/2 cup of yogurt in a glass bowl. Add 2 tsp. of chili powder and 1 tsp. of ground coriander to the bowl.

2. Grate the skin of a medium-sized lemon, and add the zest to the bowl. Cut the lemon in half and squeeze the juice into the bowl. Remove any lemon seeds that slip out.

3. Mix the ingredients together using a wire whisk. Mince two to three cloves of garlic and add them to the bowl, and mix it in.

4. Place the chicken in the glass baking dish. Pour the yogurt marinade over the chicken. Cover the chicken with plastic wrap and place it in the refrigerator.
