Silicone baking sheets turn even the worst cookie sheets into nonstick surfaces of the highest quality. Silicone distributes the heat evenly, meaning no more burned bottoms on cookies and other baked goods. Silicone quickly cools, too--the cooking stops once the mat is removed from the oven--helping prevent burns to both you and your baked goods. But perhaps the biggest benefit of switching to silicone is cleanup: Most residue wipes right off and requires no hard scrubbing to remove.
Instructions
1. Wash a new baking sheet before use in warm, soapy water, then let dry. Place the silicone baking sheet on top of a metal cookie sheet to lend it stability.
2. Spray the baking mat with nonstick cooking spray or oil lightly with cooking oil. Sprinkle flour on top of the oiled mat if baking a chocolate batter.
3. Place the food to be baked on the mat as you would a regular cookie or baking sheet. Bake cookies, meats and any other item you normally would cook on a sheet on the silicone mat.
4. Place the cookie sheet and baking mat on the center rack of a preheated oven. Close the oven and bake for 5 minutes less than usual for the specific recipe. Check to see if done at the end of the cooking time and add more time as needed. Silicone may speed or slow the baking time for certain recipes.
5. Remove the cookie sheet from the oven and slide the baking mat off and onto a cooling rack or trivet. Use a plastic or wooden utensil to remove the baked items from the mat.
6. Wash the baking mat in the dishwasher or in a sink of warm, soapy water. Avoid using abrasive scrubbers.
