Brussels sprouts contain high levels of vitamin C, 1/2 cup of cooked brussels sprouts supplies 80 percent of the recommended daily allowance according to the U.S. Department. of Health and the Centers for Disease Control and Prevention (CDC). They are high-protein vegetables and contain significant amounts of beta carotene (vitamin A). They are not popular vegetables, being rated children's least favorite vegetable in a survey by England's Stroke Association. Many detractors complain of the odor of cooked Brussels sprouts.
