Feta cheese
can be used in recipes or crumbled over salads.
Made from the milk of goats, sheep or cows, feta is a tangy soft cheese. Commonly crumbled on top of Greek salads, feta cheese also adds flavor to burgers, sandwiches and other foods. Unlike hard cheeses, feta cheese does not have a long shelf life. For the best flavor, consume feta cheese within three days of its purchase. It's possible to keep it in the refrigerator for a longer period, or to freeze it, with proper handling. Always keep feta refrigerated.
Instructions
1. Wash a glass container that has an airtight lid in warm, soapy water. Rinse the container with water and towel dry. Unlike plastic containers, glass containers will not transfer odors to the feta cheese.
2. Remove the feta cheese from its packaging. Place the feta cheese inside the clean glass container. Pour the brine that came in the feta cheese package into the container. If the cheese didn't come in brine, mix 1 gallon of water with 1 lb. of kosher salt. Pour the mixture over the feta cheese.
3. Secure the lid to the glass container. Place the airtight container in your refrigerator for up to three months. Check the feta cheese regularly. If signs of mold growth appear, discard all of the feta cheese. Do not just cut off the mold.
4. Freeze the feta cheese by draining all brine -- or other liquids -- and wrap the feta cheese tightly in plastic freezer wrap. Freezing feta cheese will cause it to lose some of its flavor and texture, so it's best to use feta in cooked dishes after freezing it.
