Make Bodacious Green Tomato Pickles

Nice red tomatoes in the summer, what a wonderful time of the year! Next to that my favorite time is late summer and all the green tomatoes that are available. I love fried green tomatoes but my very favorite is making green tomato pickles! This is a very easy recipe and it is something you can enjoy all winter long. I even have taken a jar of these as a housewarming gift!! They stay nice and crisp and have a wonderful flavor. You won't be sorry if you give these a try!


Instructions


1. Jars and lids should be boiled before starting.


2. To make brine:


1 Qt WHITE VINEGAR


2 QT WATER


1 PT SUGAR (2 CUPS)


3 TBLSP SALT


Boil above ingredients until sugar and salt dissolve


3. Put into jars:


2 CLOVES GARLIC


1/2 TEASPOON OREGANO


4. Put any combination of the following into the jars next:


1. sliced green tomatoes (1/4 inch slices)


2. sliced onions


3. sliced peppers


4. Any vegetables you have left in your garden!


5. Pour brine in jars to cover vegetables.


Check for air bubbles in the jars and use a knife and rolling the jar around to remove them.


6. Pour in approximately one tablespoon of olive oil to seal the top and then tighten the lids on the jars.


Let them sit 6-8 weeks and they are ready for eating!
